Grilled Lemon & Garlic Halibut


This delicious fish marinade with garlic and lemon juice is good on Halibut.

SERVES: 4
PREP TIME: 15 Minutes
COOK TIME: 15 Minutes

Ingredients

1/4 cup lemon juice
1 T. vegetable oil
1/4 tsp. salt
1/4 tsp. pepper
2 cloves garlic, finely chopped
4 Halibut fillets (approx. 2 lbs)
1/4 cup chopped fresh parsley
1 T. grated lemon peel

Directions

	Step 1: Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.

	Step 2: In shallow glass or plastic dish. mix lemon juice, 1 tablespoon oil, the salt, pepper and garlic. Add fish; turn several times to coat with marinade. Cover dish and refrigerate for 10 minutes.

	Step 3: Remove fish from marinade; reserve marinade.

	Step 4: Cover and grill fish 4 to 6 inches from medium heat 10 to 15 minutes, turning once and brushing with marinade until internal temperature of fish reaches at least 165 degrees.

	Step 5: Discard any remaining marinade. Sprinkle fish with parsley and lemon peel.
